It was girls night last night-- filled with gossip, nail polish and ...food.
Wanting to bring a slightly healthy snack, I made fruit salsa with cinnamon sugar tortilla chips.
Here's my recipe : )
Start with strawberries, blackberries, blueberries and 3 kiwis.
Slice the strawberries into small pieces, dice the kiwis, halve the blackberries, and toss the blueberries all in a bowl.
Dress with lemon and lime juice and a little bit of sugar, depending of the sweetness of the fruit.
For the chips-- brush about 6 flour tortillas with melted butter then dip in or sprinkle on cinnamon sugar (1/2 c. sugar with 2 tsp. cinnamon). Cut into wedges and place on a sheet tray lined with foil.
Bake at 350 for 6-8 minutes on the top rack.
Serve, and enjoy!
